Braised And Marinated Pork Chops Recipe

  2. Bone pork chops and cut meat in 1-1/2 inch cubes.
  3. (Reserve bones for stock.)

  5. Mince ginger root and garlic, then combine with soy sauce and sherry.

  7. Add in to pork and toss gently.
  8. Let stand 30 min, turning meat occasionally; then drain, discarding marinade.

  10. Meanwhile cut scallion stalks in 1-inch sections.
  11. Combine remaining soy sauce with sugar and pepper.

  13. Heat oil in a heavy pan.
  14. Add in marinated pork and brown quickly on all sides.
  15. Add in scallions and stir-fry a few times.
  16. 6.
  17. Stir in soy mix.
  18. Bring to a boil, then simmer, covered, till tender (about 30 min).
