Carrots, Peas and Potatoes Flavoured with Cumin

  1. Dice the carrots and potatoes.
  2. Coarsely chop the onions and thinly slice the scallions.
  3. Set aside.
  4. Heat oil in a large skillet over medium heat.
  5. When hot, add the cumin seeds and let them sizzle for 3 or 4 seconds.
  6. Add the chilies and stir them for 3 to 4 seconds.
  7. Put in the onions and stir and cook for 5 minutes.
  8. Add the carrots and peas.
  9. Stir them for 1 minute.
  10. Cover, turn heat to low and cook for 5 minutes.
  11. Uncover, slightly raise the heat.
  12. Add the potatoes, salt and sugar.
  13. Stir and cook for 3 minutes.
  14. Add the scallion, heat for 30 seconds and serve.
