AMIEs VALENTINEs CHOCOLATE Cake

  1. Preheat the oven to 180AsC (360AsF).
  2. Lightly grease a 25-cm (10-in) heart-shape cake pan and line the base with baking paper, if you like.
  3. Beat the butter and sugar together using an electric mixer, until pale and creamy.
  4. Beat in the egg yolk, one at a time, until wellcombined.
  5. Pour in the chocolate, and mix in flour, stirring thoroughly until well incorporated.
  6. Using again an electric mixer, whip the egg whites until soft peaks form.
  7. Fold egg white cream into the egg chocolate mixture, whisking continously until well blended.
  8. Pour into the prepared pan and bake for 60 minutes, until golden brown, until the center is firm to touch and a skewer comes out clean when tested.
  9. Allow to cool in the pan for 20 minutes.
  10. Remove from the pan and place on a wire rack to cool completely.
  11. Dust heavily with icing sugar.
  12. Serve, share and enjoy!
