AMIEs VALENTINEs CHOCOLATE Cake
- 150 grams softened butter
- 150 grams sugar
- 150 grams dark chocolate, melted
- 5 medium egg yolks plus 5 egg white, separated
- 150 grams baking flour
- Preheat the oven to 180AsC (360AsF).
- Lightly grease a 25-cm (10-in) heart-shape cake pan and line the base with baking paper, if you like.
- Beat the butter and sugar together using an electric mixer, until pale and creamy.
- Beat in the egg yolk, one at a time, until wellcombined.
- Pour in the chocolate, and mix in flour, stirring thoroughly until well incorporated.
- Using again an electric mixer, whip the egg whites until soft peaks form.
- Fold egg white cream into the egg chocolate mixture, whisking continously until well blended.
- Pour into the prepared pan and bake for 60 minutes, until golden brown, until the center is firm to touch and a skewer comes out clean when tested.
- Allow to cool in the pan for 20 minutes.
- Remove from the pan and place on a wire rack to cool completely.
- Dust heavily with icing sugar.
