Peanut Brittle
- 1 cup sugar
- 1/2 cup light corn syrup
- 1 dash of salt (optional)
- 1-1/2 cup Planter's extra lg. Virginia salted peanuts,
- just about any other kind of peanut
- 1 tbsp. butter
- 1 tsp. vanilla extract
- 1 tsp. baking soda
- Microwave times will vary with oven wattage.
- This recipe based on 1100w carousel oven.
- Spray a large baking sheet with cooking oil spray and place on hot pad or cooling rack.
- In large microwave-safe (non-plastic) bowl, combine sugar, light corn syrup and pinch of salt.
- Mix thoroughly, until all the sugar is incorporated well into the syrup to prevent burning.
- Microwave 5 minutes.
- Without delay, add peanuts, butter, vanilla, and stir well.
- Microwave 3 more minutes.
- Immediately add baking soda, and beat well.
- Pour onto prepared baking sheet and spread with wooden spoon.
- Cool until set.
- Break into pieces.
- Store in airtight container.
