Black-Eyed Pea Cornbread
- 1 lb pork sausage
- 1 onion, chopped
- 1 cup cornmeal
- 12 cup flour
- 1 teaspoon salt
- 12 teaspoon baking soda
- 2 eggs
- 1 cup buttermilk
- 13 cup vegetable oil
- 1 bell pepper, small, chopped
- 34 cup creamed corn
- 8 ounces cheddar cheese, grated
- 1 (15 ounce) can black-eyed peas, drained
- 2 jalapenos, seeded and chopped
- Saute sausage and onion until brown, drain and set aside.
- Combine cornmeal and other dry ingredients.
- Beat eggs, buttermilk, and oil together and combine with dry ingredients (batter will be lumpy).
- Add sausage and onion mixture, green pepper, corn, cheese, peas and jalepenos.
- Pour into very hot, lightly greased iron skillet.
- Bake in a preheated oven at 350 degrees for 50-55 minutes.
