Mother's Cranberry Mold Recipe
- 1 (16 ounce.) can jellied cranberry sauce
- 1 c. boiling water
- 1 (3 ounce.) pkg. strawberry Jello
- 1 tbsp. lemon juice
- 1/4 teaspoon salt
- 1/2 c. mayonnaise
- 1 tart apple, shredded (Granny Smith's work great)
- 1/2 c. minced walnuts, optional
- In saucepan (or possibly microwave), heat cranberry sauce.
- Add in water and Jello.
- Stir till Jello dissolves.
- Add in lemon juice and salt.
- Refrigeratetill slightly thick.
- Add in mayonnaise.
- Beat till fluffy with electric hand beater.
- Mix in apple and walnuts.
- Pour in mold and chill.
- Can easily be increased.
- Serves 6.
- A holiday tradition in our home.
