Cauliflower Rye Casserole
- 1 cup beer
- 3 cups rye bread cubes
- 1 head cauliflower, cut into bite size pieces
- 2 tablespoons butter
- 1 teaspoon caraway seed
- 3 cups grated extra-sharp cheddar cheese
- 4 eggs
- 1 teaspoon dry mustard
- 12 teaspoon ground coriander
- fresh ground black pepper, to taste
- Pour beer and let sit until completely flat.
- Dry bread cubes on a baking sheet in a 300F oven until browned, making sure they do not burn!
- Saute cauliflower in butter with the caraway seeds, until just tender.
- Combine with bread and cheese and spread in a greased 2-quart casserole dish.
- Mix remaining ingredients with reserved beer in a blender and pour over casserole.
- Bake at 350F for 30-45 minutes, until browned and puffy.
