Sweet Napa Cabbage with Pasta
- 8 ounces fresh angel hair pasta, cooked
- 2 tablespoons vegetable oil
- 1 onion, sliced thin
- 2 Chinese eggplants, sliced thin
- 1/2 head Napa cabbage, shredded
- 2 medium tomatoes, diced
- 1 tablespoon Herbes de Provence
- In a non-stick frying pan or a wok, heat oil until smoking.
- Add the onions and cook until softened, about 4 minutes.
- Add eggplant and cook for 4 more minutes.
- Add the cabbage, tomatoes and Herbes de Provence and simmer for 5 minutes.
- Toss with angel hair pasta and season to taste
