Oat Me Oh My, Healthy Oatmeal Cookies

  1. Preheat oven to 375 F.
  2. Combine splenda, brown sugar, pumpkin and butter, egg substitute and vanilla until thoroughly mixed.
  3. Add in all the dry ingredients, except oats and "add in's".
  4. Use a small melon scoop to place cookies about 1 inch apart on a greased cookie sheet.
  5. Gently press down on the cookies with a fork.
  6. Bake in the oven for 10-12 minutes.
