Gourmet Stuffed Mushrooms
- 13 cups Extra Light Olive Oil, Divided
- 3/4 cups Italian Seasoned Bread Crumbs
- 1 cup Pecorino Romano Cheese, Divided
- 2 cloves Garlic, Medium Sized, Peeled And Minced
- 3 Tablespoons Fresh Parsley, Chopped
- 2 Tablespoons Fresh Mint, Chopped
- Salt And Freshly Ground Pepper, To Taste
- 28 ounces, weight Gourmet Stuffing Mushrooms, Cleaned And Stems Removed
- Preheat the oven to 400 degrees F and drizzle about 1 tablespoon of olive oil onto a heavy sheet pan to coat.
- Stir the breadcrumbs, 3/4 cup of the Pecorino Romano, garlic, parsley, mint, salt and pepper (to taste), and add 3-4 tablespoons of olive oil to the mixture and stir.
- Spoon filling evenly into each mushroom and top with the remaining 1/4 cup Pecorino Romano.
- Drizzle with the remaining olive oil and bake until the mushrooms are tender and the filling is heated through and golden on top, about 25 minutes.
- Serve warm.
