Mom's Yellow Squash Casserole Recipe
- 2 c. yellow squash, sliced & boiled (but not too soft)
- 1 c. whole lowfat milk
- 1 sm. onion, diced
- 12 saltines, crushed
- 2 Large eggs, beaten
- 1 c. grated Velveeta (plus 3-4 slices for later)
- Salt & pepper to taste
- Mix squash, milk, onion, saltines, eggs, grated cheese and salt and pepper in large bowl.
- Pour into greased 1 1/2 qt casserole dish.
- Bake 20 min at 350 degrees.
- Lay slices across top and continue baking another 10 min.
