Warm Goat Cheese on Cranberries With Balsamic/Port Wine Dressing
- 2 12 cups cranberries (fresh or frozen)
- 4 tablespoons balsamic vinegar
- 3 tablespoons port wine or 3 tablespoons a not-too-dry red wine
- 1 tablespoon olive oil
- 4 slices goat cheese (thumb-sized, cut vertically 1/2 - 3/4 inch thick)
- 1 handful mixed greens
- black pepper
- Prepare cranberries according to package directions.
- Preheat oven broiler.
- Pour vinegar and wine into a pan and warm over low heat for about 5 minutes.
- In a separate pan, heat oil; add goat cheese slices and shake to coat evenly with oil, about 1 minutes.
- Immediately remove pan to broiler to lightly brown surfact of cheese.
- Remove and let rest for 2-3 minutes.
- Divide greens and cranberries amoung 4 salad plates; place a slice of cheese on top of the warm cranberries.
- Drizzle dressing over top; add a twist of pepper.
- So Good!
