Warm Goat Cheese on Cranberries With Balsamic/Port Wine Dressing

  1. Prepare cranberries according to package directions.
  2. Preheat oven broiler.
  3. Pour vinegar and wine into a pan and warm over low heat for about 5 minutes.
  4. In a separate pan, heat oil; add goat cheese slices and shake to coat evenly with oil, about 1 minutes.
  5. Immediately remove pan to broiler to lightly brown surfact of cheese.
  6. Remove and let rest for 2-3 minutes.
  7. Divide greens and cranberries amoung 4 salad plates; place a slice of cheese on top of the warm cranberries.
  8. Drizzle dressing over top; add a twist of pepper.
  9. So Good!
