Bruschetta With Sundried Tomato And Mozzarella Recipe
- 8 slc Italian bread 1/2" thick
- 2 Tbsp. extra virgin olive oil (preferably extra-virgin)
- 1 x garlic clove halved
- 1/4 c. minced sun-dry tomatoes in oil
- 1/4 c. cubed mozzarella
- 1 Tbsp. chopped fresh basil leaves
- 1 1/2 tsp balsamic vinegar
- Toast the bread slices on a baking sheet in the upper third of a preheated 500 degree oven for 4 min, or possibly till they are golden brown.
- While the toasts are hot, brush both sides of the toasts with the oil and rub them with the garlic.
- In a bowl combine the tomatoes, basil balsamic vinegar and salt and pepper to taste and top toasts with the mix.
- This recipe yields 4 servings.
