Grilled Vegetable and Swiss Cheese Sandwich

  1. Preheat grill to medium-high.
  2. Brush 1/2 of the oil onto onions, zucchini and red peppers.
  3. Grill 3 to 4 minutes on each side or until tender.
  4. Season with salt and black pepper.
  5. For each serving: Place 1 cheese slice, 2 onion slices, 4 zucchini slices, 1 red pepper piece and 1 tomato slice on 1 bread slice; top with second cheese slice and second bread slice.
  6. Brush 1/2 Tbsp.
  7. oil onto each side of sandwich.
  8. Add to hot grill.
  9. Cook until sandwich is golden brown on both sides and Swiss cheese is melted.
