Grilled Vegetable and Swiss Cheese Sandwich
- 3 cups olive oil, divided
- 50 slices red onions,cut into 1/4-inch-thick slices
- 100 slices zucchini, cut into 1/4-inch-thick slices
- 1-1/2 qt. Canned roasted red peppers, drained, quartered
- - salt
- - black pepper
- 50 slices KRAFT Pasteurized Process Swiss Cheese Slice
- 25 slices tomatoes, cut into 1/4-inch-thick slices Safeway 1 lb For $1.29 thru 02/09
- 50 slices Sourdough bread slices
- Preheat grill to medium-high.
- Brush 1/2 of the oil onto onions, zucchini and red peppers.
- Grill 3 to 4 minutes on each side or until tender.
- Season with salt and black pepper.
- For each serving: Place 1 cheese slice, 2 onion slices, 4 zucchini slices, 1 red pepper piece and 1 tomato slice on 1 bread slice; top with second cheese slice and second bread slice.
- Brush 1/2 Tbsp.
- oil onto each side of sandwich.
- Add to hot grill.
- Cook until sandwich is golden brown on both sides and Swiss cheese is melted.
