Hearty Beef Chowder Recipe
- 1 3/4 c. warm water
- 1 pkg. (5.5 ounce.) hash brown potatoes with onions
- 2 tbsp. minced onion
- 1/4 c. butter
- 1 tbsp. flour
- 4 c. lowfat milk
- 1 can (12 ounce.) whole kernel corn with sweet peppers
- 1 pkg. (3 1/2 ounce.) dry beef, cut into 1-inch pcs
- 1/2 teaspoon salt
- 1/2 teaspoon lemon pepper
- 1/4 teaspoon celery salt
- Pour water on potatoes; let stand 10 min.
- Cook and stir onion in butter in 3-qt saucepan over medium heat till light brown, about 2 min.
- Stir in flour; cook and stir 1 minute.
- Stir in lowfat milk gradually.
- Drain potatoes; rinse.
- Stir potatoes, corn (with liquid), dry beef, salt, lemon pepper and celery salt into lowfat milk mix.
- Heat to boiling; reduce heat.
- Simmer uncovered till beef and vegetables are warm, about 2 min.
- 4 servings
