Indian Beef with Cauliflower and Peppers

  1. Works in slow cookers from 3 1/2 to 6 quarts
  2. In a skillet, heat oil over medium-high heat for 30 seconds.
  3. Add beef, in batches and cook, stirring, adding additional oil if necessary, until browned, about 3 minutes per batch.
  4. Transfer to slow cooker stoneware.
  5. Reduce heat to medium.
  6. Add additional oil to pan if necessary.
  7. Add onions to pan and cook, stirring, until softened, about 3 minutes.
  8. Add ginger root, garlic, cinnamon stick, peppercorns, bay leaves and toasted cumin and coriander and cook, stirring, for 1 minute.
  9. Add beef stock and tomato paste and bring to a boil, scraping up brown bits in the pan.
  10. Season to taste with salt, if using.
  11. Transfer to slow cooker stoneware.
  12. Stir well.
  13. Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours, until beef is tender.
  14. Discard bay leaves and cinnamon stick.
  15. Add red pepper and chile pepper and stir well.
  16. Stir in cooked cauliflower.
  17. Cover and cook on High for 20 minutes, until pepper is tender.
  18. To serve, garnish with a drizzle of yogurt, toasted almonds and cilantro.
  19. VARIATION
  20. Substitute 4 cups (1 l) broccoli florets for the cauliflower.
