Italian Wedding Soup
- 1 lb Ground Turkey
- 1 cup shredded carrots
- 1 cup celery
- 1 medium onion diced
- 2 clove garlic peeled &smashed
- 1 packages fresh baby spinach
- 1 packages Lip ton Onion Soup Mix
- 1 quart low sodium chicken broth
- 3 tbsp Italian Seasoning
- 1 each bay leaf
- 1 salt and pepper
- 1 cup Acini de pepe Pasta
- 1 warm water to cover
- 1 tbsp chopped parsley
- 1 tbsp olive oil, extra virgin
- Sweat veg.
- (except spinach) In olive oil for 5 min.
- Add salt and pepper, garlic, italian seasoning, and bayleaf.
- Add ground turkey to brown.
- Break up.
- Add onion soup mix and parsley.
- Add quart of chicken broth and spinach.
- Add water to cover.
- Bring to boil and reduce heat to simmer for 30 minutes.
- Add pasta.
- Simmer for 10 more minutes, and enjoy.
- I use 6 qt pot to make soup
