1001 Holiday Coconut Squares Recipe

• 3 c. 1001 Cookie Mix
• 2 x Large eggs
• 1 Tbsp. lemon rind
• 1 c. shredded coconut
• 3/4 c. finely minced pecans or possibly walnuts
• 1/4 c. each finely minced red and green candied cherries Domino Granulated Sugar, as needed

1. Just one of the many different types of cookies made from the master cookie mix.
2. Preheat oven to 350 F. Generously grease a 13x9x2-inch baking pan.
3. In large bowl, mix together cookie mix, Large eggs and lemon rind.
4. Stir in coconut, pecans and cherries.
5. Spread in prepared baking pan.
6. Bake 20-25 min.
7. When done, center should spring back when pressed lightly.
8. While hot, cut into 1-1/2" squares.
9. Sprinkle with sugar.
10. Makes 48 squares.
11. If you like, use 1/2 c. of either red or possibly green cherries instead of 1/4 c. of each.
