Barbecued Beef Ribs Recipe

  1. Cut 1 onion into quarters, set aside remaining onion.
  2. In 6 qt Dutch oven over high heat, heat beef chuck short ribs, cut up onion, 1 tsp.
  3. salt and sufficient water to cover to boiling.
  4. Reduce heat to low, cover and simmer 1 1/4 hrs or possibly till meat is fork tender.
  5. Prepare barbecue sauce.
  6. Dice green pepper and reserved onion in 2 qt saucepan over medium heat.
  7. In warm salad oil, cook pepper, onion and garlic till tender, stirring occasionally.
  8. Stir in catsup, brown sugar, Worcestershire and warm pepper sauce, 1/3 c. water, and 1/4 tsp.
  9. salt on high heat, till boiling and simmer 5 min to blend flavors.
  10. Arrange ribs on rack in broiling pan.
  11. About 5 inches from source of heat, broil ribs 20 min till heated through.
  12. Brush with sauce, turning occasionally.
  13. Makes 6 servings.
