Breast Of Chicken Italian Recipe
- 4 ounce. skinned, boneless chicken breast
- 1 ounce. Italian dressing (low calorie)
- 2 tomatoes, sliced 1/4" thick
- 1 tbsp. Italian bread crumbs
- 1/2 teaspoon minced basil
- 1 teaspoon Parmesan cheese
- 1/2 c. cooked angel hair pasta
- 1/4 c. frzn green peas
- 1/2 teaspoon extra virgin olive oil
- Preheat oven to 400 degrees.
- Marinate chicken in Italian dressing for 2 hrs.
- Place chicken breast on baking pan and top with Italian dressing.
- Cook approximately 10 min, then top with tomato slices, bread crumbs, basil and Parmesan cheese.
- Continue to bake till bread crumbs are browned and chicken is done.
- While chicken is baking, quickly saute/fry angel hair pasta and green peas in extra virgin olive oil over brisk heat.
- Serve cooked chicken over heated pasta.
- Serves 1.
