Steamed Banana Buns with Pancake Mix
- 1 Banana
- 200 grams Pancake mix
- 1 Egg
- 1 Sugar
- 150 ml Milk
- 1 tbsp Vegetable oil (optional)
- Prepare a steamer and heat.
- Mash the banana with a fork.
- Line a cupcake tin with aluminium (or paper) cups.
- Put the egg and granulated sugar in a bowl and mix with a whisk.
- Add the milk (and vegetable oil) and mix.
- Add the pancake mix, and fold it in gently in a cut-and-fold motion with a rubber spatula.
- Finally, add the mashed banana, and gently combine.
- Pour the batter into the cups up to about 70% full.
- Place into the steamer, steam for 10-15 minutes.
- Check with a bamboo skewer, and if it comes out clean they are done.
- Add as much vegetable oil as you want.
- The more you add, the softer and more moist they become.
