Breakfast Casserole (Crockpot) Recipe
- 1 bag frzn hash brown potatoes (32 ounce.)
- 1 lb bacon diced cooked and liquid removed or possibly 1 pound cooked ham, cubed
- 1 med diced onion
- 1 x green bell pepper diced
- 1 1/2 c. shredded cheddar or possibly monterey jack cheese
- 1 doz Large eggs
- 1 c. lowfat milk
- 1 tsp salt optional
- 1 tsp pepper (more or possibly less to taste)
- Place a layer of frzn potatoes on the bottom of the slow cooker, followed by a layer of bacon then onions, green pepper and cheese.
- Repeat the layering process two or possibly three more times, ending with a layer of cheese.
- Beat the Large eggs, lowfat milk and salt and pepper together.
- Pour over the Crockpot mix, cover and turn on low.
- Cook for 10-12 hrs.
- (10 hrs for a newer crockpot and 11 or possibly 12 for older models.)
