Snow Peas And Basil Vinaigrette Recipe

  1. In a bowl whisk together the vinegar, the basil, the black pepper, and salt to taste.
  2. Add in the oil in a stream, whisking, and whisk the dressing till it is emulsified.
  3. Add in the red pepper strips and let them marinate for 10 min.
  4. In a saucepan of boiling salted water, blanch the snow peas for 10 seconds.
  5. Drain them and refresh them under cool water.
  6. Pat dry.
  7. Arrange the peas on a large platter, interspersing the liquid removed red pepper strips in a decorative fashion.
  8. Whisk the dressing and drizzle over the vegetables.
  9. Sprinkle with crushed cashews.
