Pears, Pasta & Pecan Salad
- 1 cup uncooked dried gemelli (double twist pasta) or small pasta shells
- 1/4 cup sour cream
- 1 teaspoon freshly grated lime zest
- 3 tablespoons lime juice
- 3 tablespoons olive or vegetable oil
- 2 tablespoons honey
- 1/4 cup coarsely chopped pecans, toasted
- 2 ribs (1 cup) celery, sliced
- 1 medium pear, sliced, quartered
- 1 medium apple, sliced, quartered
- 2 tablespoons chopped green onions
- Cook pasta according to package directions.
- Rinse with cold water; drain.
- Combine all salad dressing ingredients in bowl.
- Toss cooked pasta and all remaining salad ingredients together in large bowl just before serving.
- Drizzle with dressing; toss gently to coat.
