Peppermint Bark Biscotti

  1. Preheat oven to 325AF.
  2. In a large bowl, combine flour, cocoa powder, baking powder, and salt.
  3. Using an electric mixer, beat eggs, peppermint extract, butter, and sugar until combined.
  4. About 3 minutes.
  5. Add dry ingredients from step 1 to egg mixture.
  6. Beat until just blended.
  7. Divide dough in half and form into two logs on a parchment lined cooking sheet.
  8. Leave space for dough to spread.
  9. Bake until dough is firm, about 30 minutes.
  10. Let cool for 15 minutes.
  11. Using a serrated knife, cut logs into 0.5 inch slices.
  12. Arrange slices on baking sheet with a wire rack and return to the oven for 15 minutes.
  13. Melt the chocolate chips in a double boiler.
  14. Drizzle on each cookie and sprinkle with peppermint candy.
  15. Let chocolate to completely cool before serving.
  16. It is best to make these at least a day in advance to allow them to dry out a little and become crunchy.
