Crawfish (Cajun) Piquant
- 3 lb crawfish
- 2 onions, chopped or minced
- 2 cup celery
- 3 clove garlic
- 1 dash salt and pepper
- 1 can tomato sauce (10 oz)
- 1 can water
- 1 can whole or diced tomatoes (lg can)
- 1/2 cup oil
- 1 tbsp creole or old bays seasoning
- 6 whole okra (optional)
- 1 tbsp sugar (optional)
- saute onion, celery, garlic, and bell pepper.
- add tomato products and water..
- add s&p and old bays seasoning...
- allow to get hot... turn down to Med/ low and cook for 45 minutes.
- add crawfish and allow to cook for 30 more minutes..
- serve over rice...
- review said that tomato made it seem acidic .... add about 1 Tbsp of sugar to cut this.... taste ....add 1/2 tsp after that until u get the taste u want..... does not make sweet but it does cut through the tomato taste
