Aubergine and Hommus Grills
- 2 aubergines, thickly sliced lengthways
- 2 teaspoons vegetable oil, plus extra for brushing
- 3 slices bread, crusts removed, any type
- 300 g hummus
- Lay aubergine slices flat on baking sheet.
- Brush with oil and season.
- Grill 15 minutes, turning twice, brushing with oil till slices are softened and cooked through.
- Meanwhile whizz bread into crumbs.
- Add 2 tsp oil, whizz again.
- Spread some hommus on each eggplant slice.
- Tip breadcrumbs onto plate.
- Press hommus side of aubergine into crumbs to coat.
- Grill again, hommus side up till golden -about 3 or 4 minutes.
