Abalone Victoria

  1. Mix together parsley and bread crumbs.
  2. In a separate bowl, combine egg yolk, clarified butter and lemon juice.
  3. Place flour on a dish for dredging.
  4. Season 1 side of abalone steaks with salt and pepper.
  5. Lightly flour and paint with egg mixture.
  6. Coat with parsley/bread crumb mixture.
  7. Melt butter in frying pan.
  8. When butter begins to foam, add steaks and cook 1 minute each side.
  9. Add sherry and flame.
  10. Transfer to a serving dish and nap with browned butter from pan.
