Baked taco macaroni
- 1 lb Ground turkey/beef
- 1 box small pasta (macaroni, shells...)
- 1 can black beans
- 1 can tomatoes with green chiles
- 1 can corn
- 1 chopped onion(optional )
- 2 cup milk
- 1/4 cup butter
- 1/4 cup Flour
- 2 cup grated cheese
- 1 envelope Taco seasoning
- 2 cup broken/crushed tortilla chips
- dash salt (optional )
- 3/4 cup water
- Preheat oven to 350.
- Bring a pot of water to boil for pasta.
- In large frying pan saute ground meat and onions.
- (Drain if using beef, lean turkey doesn't necessarily need to be drained)
- When the meat has browned, add tomatoes, corn, and beans on medium to heat through.
- *Remember to add pasta to boiling water!
- Drain when tender.

- Turn up the heat on meat mixture and add the water and taco seasoning.
- Bring to a boil and reduce to let simmer.
- In saucepan melt the butter over medium.
- Whisk in flour and turn up the heat a little.
- Slowly whisk in milk.
- Bring to a nice simmer.
- Add about a cup and a half of cheese and whisk well to melt and incorporate.
- Remove from heat.
- add cheese if too thin.
- Mix cheese sauce with meat mixture and add the pasta.
- Taste and season with salt if necessary.
- Pour into a 13x9 casserole dish that has been sprayed with cooking spray.
- Sprinkle tortilla chips and reserved cheese on top.
- Bake for a half hour.
- Let sit for 10 minutes and dig in.
