Baked taco macaroni

  1. Preheat oven to 350.
  2. Bring a pot of water to boil for pasta.
  3. In large frying pan saute ground meat and onions.
  4. (Drain if using beef, lean turkey doesn't necessarily need to be drained)
  5. When the meat has browned, add tomatoes, corn, and beans on medium to heat through.
  6. *Remember to add pasta to boiling water!
  7. Drain when tender.
  8. * :)
  9. Turn up the heat on meat mixture and add the water and taco seasoning.
  10. Bring to a boil and reduce to let simmer.
  11. In saucepan melt the butter over medium.
  12. Whisk in flour and turn up the heat a little.
  13. Slowly whisk in milk.
  14. Bring to a nice simmer.
  15. Add about a cup and a half of cheese and whisk well to melt and incorporate.
  16. Remove from heat.
  17. add cheese if too thin.
  18. Mix cheese sauce with meat mixture and add the pasta.
  19. Taste and season with salt if necessary.
  20. Pour into a 13x9 casserole dish that has been sprayed with cooking spray.
  21. Sprinkle tortilla chips and reserved cheese on top.
  22. Bake for a half hour.
  23. Let sit for 10 minutes and dig in.
