Sour Lemon Cake
- 4 ounces butter
- 34 cup caster sugar (superfine)
- 1 12 tablespoons grated lemon rind
- 2 eggs, lightly beaten
- 1 12 cups self raising flour (self rising)
- 12 cup sour cream
- 12 cup lemon juice
- Place butter, sugar and lemon rind in the bowl of an electric.
- mixer, and beat until light and creamy.
- Add eggs to mixer.

- Fold flour, sour cream and lemon juice.

- Immediately place mixture in a greased and lined 20cm.
- (8 inch) square and bake in a preheated 180 *c.
- (350 *F) oven for 40 minutes or until cake is cooked when.

- Cut cake into wedges and serve warm with cream.
