Corn and Okra Soup
- 1 (14 1/2 ounce) can okra, drained
- 1 (8 ounce) can whole kernel corn, drained
- 2 cups vegetable broth
- 12 cup tofu, diced
- 1 stalk celery, thinly sliced
- 1 small onion, diced
- 1 cup milk
- Combine okra, corn, broth, tofu, celery and onion in large saucepan.
- Cover and cook over medium heat 10 minutes until heated through.
- Add milk, salt and pepper to taste.
- Reduce heat to low.
- Cover and simmer 5 to 10 minutes until soup is heated through, stirring occasionally.
- Do not boil, or milk may separate.
