Turkey and Dressing Casserole
- 1 celery rib, chopped
- 14 cup chopped onion
- 2 tablespoons butter
- 1 cup coarsely crumbled cornbread
- 1 cup cubed day old bread
- 2 tablespoons chicken or 2 tablespoons turkey broth
- 14 teaspoon poultry seasoning
- 14 teaspoon salt
- 1 dash pepper
- 14 cup butter, cubed
- 14 cup all-purpose flour
- 14 teaspoon salt
- 1 cup chicken or 1 cup turkey broth
- 14 cup milk
- 1 egg, lightly beaten
- 1 12 cups cubed cooked turkey
- dry breadcrumbs (optional)
- In small skillet, saute celery and onions until tender.
- Transfer to a large bowl and stir in corn bread, cubed bread, broth and seasonings.
- Transfer to a greased 1 qt baking dish.
- For Gravy.
- Melt butter in large saucepan.
- Whisk in flour and salt until smooth.
- Gradually add broth and milk.
- Bring to a boil, reduce heat, cook and stir for 2 minute.
- Remove from heat.
- Stir a small amount of hot mixture into the egg and return all to the pan, stirring constantly.
- Bring to a gentle boil; cook and stir for 2 min longer.
- Spoon half of the gravy mixture over the dressing.
- Layer with turkey and remaining gravy.
- Sprinkle with bread crumbs if desired.
- Cover and bake at 350 for 25-30 minute.
