Broccoli and Trail Mix Salad
- 2 cups broccoli florets
- 3 Tbs. soy mayonnaise
- 2 1/2 tsp. cider or red wine vinegar
- 3/4 cup trail mix
- 1/4 cup chopped onion
- 1/4 cup chopped red bell pepper
- 1/4 cup chopped celery
- 1/4 tsp. dried oregano
- 1/4 tsp. dried basil
- Garlic salt to taste
- Steam broccoli florets until just tender, and submerge in cold water to cool.
- Stir together mayonnaise and vinegar; set aside.
- Combine florets, trail mix, onion, red bell pepper, celery, oregano, basil and garlic salt in salad bowl.
- Toss with mayonnaise mixture, and serve.
