Mini Quiches Recipe
- 30 unbaked miniature tart shells
- 4 strips bacon
- 1 sm. can mushrooms, liquid removed
- 1/4 c. minced green onions
- 3 Large eggs
- 1 c. lowfat sour cream
- Chop bacon, fry till crisp.
- Remove fat.
- Add in onions, mushrooms and a dash of salt.
- Cook till tender.
- Set aside to cold.
- Beat Large eggs, stir in lowfat sour cream.
- Divide bacon and mushroom mix proportionately in shells.
- Spoon egg mix with tsp.
- into shell till filled.
- Bake at 375 degrees for 20 min.
- Can be reheated.
- Freezes well.
