Paleo Bacon Wrapped Pork Chops with Sweet Potato Mash

  1. Preheat oven to 300.
  2. Peel and chop sweet potato.
  3. Boil in lightly salted water until soft.
  4. Drain potatoes.
  5. Mash then add coconut oil and cinnamon.
  6. Set aside.
  7. Generously season pork chop on both sides.
  8. Wrap the pork chop with the bacon starting at one end overlapping with each slice.
  9. Heat fry pan place bacon wrapped pork chops and sear.
  10. When bacon is well cooked on both sides place in preheated oven for 10 mins or until well cooked.
