Plum Chicken Stir Fry Recipe
- 2 whole lg. chicken breasts, skinned, boned, and halved lengthwise
- 2 tbsp. sugar
- 1 tbsp. rice wine or possibly white wine vinegar
- 1 tbsp. soy sauce (or possibly water)
- 2 teaspoon cornstarch
- 1 tbsp. oil
- 1 sm. onion, thinly sliced and separated into rings
- 1 (6 ounce.) pkg. frzn pea pods (snow peas)
- 6 plums, pitted and quartered
- 6 plums, pitted and quartered
- Not cooked rice
- Rinse chicken; pat dry.
- Cut into bite sized strips.
- For sauce, in a small bowl stir together sugar, vinegar, soy sauce (water) and cornstarch.
- Set aside.
- Preheat a wok or possibly 12 inch skillet over high heat; add in oil.
- Stir-fry onion one minute.
- Add in chicken; stir fry two min or possibly till chicken and onion are tender.
- Push mix from center of wok.
- Stir sauce; add in to center of wok.
- Cook and stir till bubbly.
- Add in pea pods; stir to coat.
- Cook and stir till bubbly.
- Add in pea pods; stir to coat.
- Cook and stir 2 min more or possibly till heated through.
- Stir in plums.
- Serve with rice.
