Gazpacho & Cheese Bread
- 3 cups low-sodium vegetable juice cocktail
- 1 tomato, chopped Safeway 1 lb For $1.29 thru 02/09
- 6 Tbsp. lime juice Safeway 3 ct For $1.00 thru 02/09
- 1/2 cup finely chopped cucumber
- 1/4 cup chopped onion King Sooper's 1 lb For $0.99 thru 02/09
- 5 fresh basil leaves, chopped
- 1/4 tsp. garlic powder
- 4 slices Italian bread
- 4 tsp. soft reduced fat margarine
- 2 Tbsp. KRAFT Grated Parmesan Cheese
- 1/4 cup KRAFT 2% Milk Shredded Cheddar Cheese
- Stir vegetable juice, tomato, lime juice, cucumber, onion, basil and garlic powder until well blended.
- Spread bread slices with margarine; sprinkle with cheeses.
- Place on cookie sheet.
- Broil bread 4 to 5 inches from heat for 2 to 3 minutes or until golden brown.
- Serve with gazpacho.
