Chicken Sausage Elegante
- 1 lb sweet sausage
- 14 cup celery, finely diced
- 12 cup fresh breadcrumb
- 1 egg, beaten
- 8 small chicken breasts, deboned
- 14 cup flour
- 12 teaspoon paprika
- 3 tablespoons oil
- 1 12 cups water
- 2 chicken bouillon cubes
- 1 tablespoon cornstarch
- 2 tablespoons wine
- Cook sausage, celery, and onions until browned; stir in bread crumbs and egg.
- Distibute the stuffing between the chicken breasts; fold over filling and fasten edges with toothpicks.
- Mix the flour and paprika.
- Roll the chicken in the flour.
- In the pan you cooked the dressing in, heat the oil and then brown chicken on all sides.
- Mix the water and bouillon and pour in pan with chicken; heat to boiling.
- Turn heat to low; cover and simmer 20-30 minutes.
- In a cup, mix cornstarch and wine.
- Stir into liquid.
- Cook until gravy is thickened.
- Place prepared stuffed chicken on plate and drizzle with some gravy.
