Fresh Carrot soup
- 5 lb fresh carrots
- 2 stick Celery
- 5 each medium white onions
- 1 gallon vegetable broth
- 3 clove garlic cloves
- 1 bunch fresh basil
- 1 tsp dill weed
- 1 tsp rosemary
- 1 tsp oregano
- 1 tsp ground cumin
- 1/2 tsp curry powder
- 2 tsp paprika
- 2 bay leaf
- 2 cup almond milk
- piece cilantro
- Cut carrots, onions and celery
- Saute carrots, onions and celery till soft or translucent with 3 tablespoons of watter.
- Add the vegetables to the pot and add the vegetable broth
- Add the rest of ingredients except milk and cilantro and bring to a boil, cover and simmer for 25 minutes or till tender.
- Add the milk and boil for 1 min
- Add to food processor or blender until smooth.
- Enjoy garnish with cilantro
