Curry Remix Rice Croquettes

  1. Heat a pot of curry leftovers and stir in rice.
  2. Season with grated cheese, salt, and pepper to taste.
  3. After the rice cools down to handling temperature, wrap in plastic wrap to make balls.
  4. (Be sure to make firm balls that won't break apart easily.)
  5. Dredge balls from Step 2 in flour.
  6. Roll in bowl of beaten egg.
  7. Coat in panko.
  8. Deep fry in oil heated to 340-360F/170-180C until nicely golden.
  9. Transfer to platter and serve with ketchup to taste.
