Chocolate Covered Marshmallow Cookies
- 1 3/4 cups flour, all-purpose
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 cup vegetable shortening
- 1 cup sugar
- 1 each eggs
- 1 teaspoon vanilla extract
- 1/4 cup milk
- 18 large marshmallows halved
- 36 each pecan halves
- 2 cups powdered sugar
- 5 tablespoons cocoa powder
- 18 teaspoon salt
- 3 tablespoons butter or margarine, softened
- 4 tablespoons light cream (half&half)
- Sift together first 4 ingredients.
- Set aside.
- In mixing bowl, cream shortening and sugar.
- Add egg, vanilla and milk.
- Add flour mixture and mix well.
- Drop by heaping teaspoonfuls about 2 inches apart onto greased cookie sheets.
- Bake at 350F (180C) for 8 minutes.
- Remove cookies from oven, and top each with a marshmallow half.
- Return to oven for 2 minutes.
- Place cookies on wire racks to cool.
- Meanwhile, beat last 5 ingredients together.
- Spread on each cookie, and top with a pecan half, if desired.
