Bacon-Wrapped Scallops

  1. First, set your oven to broil.
  2. Next, take the half slices of bacon and pre-cook them a little bit in the microwave.
  3. I zapped mine for about a minute and a half.
  4. You still want the bacon to be easily bendable.
  5. Wrap the bacon around each scallop and stick a skewer through it to hold it all together.
  6. Once all of the scallops are wrapped and skewered, its time to make the sauce.
  7. Start by combining the butter, brown sugar and garlic in a saucepan over medium heat.
  8. Bring to a boil and cook until it starts to look kind of caramel-y, stirring almost constantly.
  9. When the sauce is done, remove from the stove and pour slowly over the scallops.
  10. Spoon any sauce that fell to the bottom of the pan back onto the scallops.
  11. Broil the scallops for about 6 minutes or until the bacon is crispy.
