Chicken Everest Recipe
- 1 (3 lb.) roasting chicken
- 2 cloves garlic, crushed
- 2 teaspoon curry pwdr
- 2 teaspoon finely grated ginger
- 1 teaspoon paprika
- 2 teaspoon salt
- 1/2 teaspoon grnd black pepper
- 2 tbsp. lemon juice
- 1/2 teaspoon grnd bay leaves
- 2 teaspoon light soy sauce
- 2 tbsp. veg. oil
- 2 tbsp. grnd rice
- Little hot water
- 2 tbsp. finely minced spring onions
- 2 tbsp. minced fresh coriander leaves
- Wash and dry chicken well.
- Combine all remaining ingredients with sufficient hot water to make a paste of spreading consistency.
- Rub paste inside and outside the chicken.
- Leave for 1 hour.
- Roast in preheated moderate 350 degree oven for 1 to 1 1/4 hrs or possibly till chicken is done.
- If bird browns too much during cooking, cover with foil.
- Serve hot or possibly cool.
- Serves 6.
