Tropical Mango Chicken

  1. Combine lime juice, ginger, pepper, salt, oil, and wine in large freezer bag.
  2. Shake.
  3. Add chicken breasts, shake to coat.
  4. Marinate 1-2 hours.
  5. Remove chicken from marinade, save marinade.
  6. Grill chicken, basting several times throughout.
  7. It should take about 5-7 minutes on each side over a med-high heat.
  8. Add mangoes during last 5 minutes, grilling lightly and stirring a little as you go.
  9. Serve over rice.
  10. If you like, heat leftover marinade until boiling and use as a sauce.
