Grilled Red Potato Skewers

  1. Place the potatoes and water in an ungreased microwave safe 2 quart dish.
  2. Cover and microwave on high for 10 to 12 minutes or until almost tender, stirring once.
  3. Drain.
  4. In a large bowl, combine the remaining ingredients.
  5. Add potatoes.
  6. Cover and refrigerate for 1 hour.
  7. Drain, reserving mayonnaise mixture.
  8. On 6 metal or soaked wooden skewers, thread potatoes.
  9. Grill, uncovered, over medium heat for 4 minutes on each side, brushing occasionally with reserved mayonnaise mixture or until potatoes are tender and golden brown.
