Chinese Peanut Chicken Recipe

  1. Marinate chicken in salt and cooking wine for about 10 min.
  2. While it is marinating, make a thickening sauce with soy sauce, oyster sauce, sugar and 2 Tbsp.
  3. water, set aside.
  4. Dust chicken with cornstarch and fry in deep oil.
  5. When done, remove from oil and set aside.
  6. Using only 2 Tbsp.
  7. of leftover veg.
  8. oil, stir fry ginger and garlic a few seconds, then add in red pepper and green onion and stir fry for about 2 min.
  9. Add in mushrooms, grapes and chicken.
  10. Toss around a few min, then add in thickening sauce and bring to a boil.
  11. Toss in peanuts and 2 Tbsp.
  12. Chinese cooking wine and serve.
