Chinese Peanut Chicken Recipe
- 1 red pepper, cut up
- 1 green onion, cut in 1" pcs
- 1 whole chicken breasts, cut in 1" cubes
- 2 pcs ginger, crushed
- 1 clove garlic, crushed
- 1/2 c. mushrooms
- 1/2 c. grapes
- 1 c. oil, for frying
- 1 tbsp. oyster sauce
- 1 tbsp. soy sauce
- 1 tbsp. flour
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 2 tbsp. cooking wine
- 1/2 c. peanuts
- Marinate chicken in salt and cooking wine for about 10 min.
- While it is marinating, make a thickening sauce with soy sauce, oyster sauce, sugar and 2 Tbsp.
- water, set aside.
- Dust chicken with cornstarch and fry in deep oil.
- When done, remove from oil and set aside.
- Using only 2 Tbsp.
- of leftover veg.
- oil, stir fry ginger and garlic a few seconds, then add in red pepper and green onion and stir fry for about 2 min.
- Add in mushrooms, grapes and chicken.
- Toss around a few min, then add in thickening sauce and bring to a boil.
- Toss in peanuts and 2 Tbsp.
- Chinese cooking wine and serve.
