Miso Mapo Eggplant and Green Peppers

  1. Roughly chop the eggplant into small chunks of equal size.
  2. Similarly, roughly chop the green pepper into small chunks of equal size.
  3. Mince the garlic.
  4. Heat sesame oil in a pan and add the minced garlic.
  5. When it has begun to caramelize, add the ground pork and cook.
  6. Thoroughly cook the pork and season with salt and pepper.
  7. Add the eggplant.
  8. When the eggplant has cooked through, add the miso, soy sauce, sake, and mirin in order.
  9. Next, add the green pepper and cook lightly before adding the doubanjiang.
  10. Mix the ingredients well, and then add the dissolved katakuriko.
  11. When the mixture has thickened, it's done.
