Miso Mapo Eggplant and Green Peppers
- 100 grams Ground pork
- 1 clove Garlic
- 1 Eggplant
- 2 Green peppers
- 2 tsp Sesame oil
- 1 tbsp Sake
- 1 tsp Soy sauce
- 1 tsp Miso
- 1 tsp Doubanjiang
- 1 tbsp Mirin
- 1 dash Salt and pepper
- 1 tsp Katakuriko
- 100 ml Water
- Roughly chop the eggplant into small chunks of equal size.
- Similarly, roughly chop the green pepper into small chunks of equal size.
- Mince the garlic.
- Heat sesame oil in a pan and add the minced garlic.
- When it has begun to caramelize, add the ground pork and cook.
- Thoroughly cook the pork and season with salt and pepper.
- Add the eggplant.
- When the eggplant has cooked through, add the miso, soy sauce, sake, and mirin in order.
- Next, add the green pepper and cook lightly before adding the doubanjiang.
- Mix the ingredients well, and then add the dissolved katakuriko.
- When the mixture has thickened, it's done.
