Crab and scallop cakes

  1. Mix all the ingredients in bowl, except for the peanut oil.
  2. Form crab mixture into equal patties, approximately three inches in diameter.
  3. In a saute pan heat 2 tablespoons of peanut oil.
  4. Brown on one side approximately two-to-three minutes.
  5. Turn and brown the other side.
  6. Turn down heat and simmer crab cakes another 5-8 minutes.
