Crab and scallop cakes
- 1/2 lb crab meat
- 1/2 lb small scallops
- 3/4 cup crushed oyster crackers
- 1/2 cup mixed (white®ular) mild shredded cheddar cheese
- 1 tbsp onion, finely chopped
- 1 tbsp red pepper, finely chopped
- 1 tsp minced garlic
- 1 egg
- 2 tbsp mayonnaise
- 1/2 tbsp old bay seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- Mix all the ingredients in bowl, except for the peanut oil.
- Form crab mixture into equal patties, approximately three inches in diameter.
- In a saute pan heat 2 tablespoons of peanut oil.
- Brown on one side approximately two-to-three minutes.
- Turn and brown the other side.
- Turn down heat and simmer crab cakes another 5-8 minutes.
