Crustless Quiche Recipe
- 7 doz. Large eggs
- 6 pound shredded baked ham
- 2 gallons cooked spinach, liquid removed
- 15 c. shredded Swiss cheese
- 15 c. shredded Cheddar cheese
- 1 gallon lowfat milk
- 1 loaf sandwich - sliced bread
- Crumble bread into LARGE mixing bowl and soften in lowfat milk.
- Add in lightly beaten Large eggs and cheese.
- Stir in ham and spinach.
- Ladle 3 inches deep into shallow baking dishes, coated with non-stick cooking spray.
- Bake at 350 degrees for 1 hour or possibly till golden and solid.
- 150 servings.
- Broccoli or possibly asparagus may be substituted for spinach.
