Turkey Taco-Stuffed Peppers
- 4 small bell peppers, halved lengthwise and seeds removed
- 1 Tbsp. olive oil
- 1 lb. ground turkey
- 1/2 cup diced onion King Sooper's 1 lb For $0.99 thru 02/09
- 1 Tbsp. chili powder
- 1 tsp. ground cumin
- 1 tsp. flour
- 1/2 tsp. garlic powder
- 3/4 cup water
- 1 cup KRAFT Mexican Style Finely Shredded Taco Cheese
- 1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
- 2 Tbsp. milk
- 2 cups lettuce
- 1/2 cup tomatoes
- 1/2 cup guacamole
- 1/4 cup fresh cilantro
- Preheat oven to 375 degrees.
- Arrange halved bell peppers in a 9 x 13 baking dish.
- Brown meat and onions.
- In a small bowl combine the chili powder, cumin, salt, flour, and garlic powder.
- Add seasoning mix and 3/4 cup water to the meat.
- Bring to boil, reduce heat.
- Simmer, uncovered 10 minutes, stirring occasionally.
- Stir 1/2 cup of cheese into the meat.
- Fill the peppers with the seasoned meat.
- Cover and bake for 30 minutes.
- Top the peppers with the remaining cheese.
- Mix sour cream and milk.
- Spoon into a zip top plastic bag.
- Cut a small hole and drizzle peppers with sour cream mixture.
- Sprinkle with cilantro.
- Serve with lettuce, tomatoes, and guacamole on the side.
